Anyone do canning?

I canned tomatoes for the first time last week. The kids and I went to my mom's and we all did it. We had a little assembly line set up. We did about 13 quarts, and we will have to do it again in a few days.
So today I decided to can some other stuff. I did 3 pints of jalepenos, and 3 pints of hot banana peppers. I should have worn gloves, my hands are on FIRE!!!!!  I also made some mango/peach/habenaro salsa. I didn't can any of it yet, I wanted to make a batch to make sure it was good. I'll can some tomorrow probably.

Wow, good for you!   ;D  ;D  Nope, I haven't tried it, but my mom used to can lots of things when I was a kid.  Home canned peaches are just the best (short of fresh peaches, of course!).

how, exactly, DO you can things?  and how long is it good for  ???  i haven't done it before, in fact, the only thing i know about is the things i see at wal mart that say "canning jars" or something like that (i think).

Ohh my mom makes her own salsa, and cans it. Also peaches, and tomatoes/spegetti sause. it stays good til u open it hahaha

I canned 14 pints of peaches last week and am going to be canning salsa and spagetti sauce this week.  I can apple sauce too but we didn't have any apples on our tree this year so that is out  :(.  I also make fruit leather and jerky, and smoke fish when we can get it, the kids just love it all  ;D

I need to find something to do with cherry tomatoes..I planted 3 plants and I think I have about 1000 ripe ones out there right now...not to mention about 3 times that many green ones. Seems like a lot of work to peel the to can them though, LMAO I could blanch them and let the kids sit and peel them. :) I have 4 habanero plants...big mistake. I may only use about 10 of them canning salsa, what do I do with the other million??? Anyone in Ohio want habaneros and cherry tomatoes???? Come get 'em...

I haven't canned anything since I was little and helped my mom can some stuff.  The most I've done lately is blanch some peas and put them in bags and freeze them. 

You can always take your extra peppers and tomatoes and go to the farmer's market if you have one around you.  Also giving them away to friends and family is a good way to get rid of them.  I had the bumper crop of key limes last year and my friends were getting a lot of them.  Right now, I've got key limes, lemons, and limequats that still need to ripen.  Hopefully next year my avocado tree will produce something.

I'm a freeze kinda person .. everything except green beans and thank goodness my sister does that.  Even freezer jam.  Kinda lazy huh?  This year though the crops have been sparse with the drought, I don't even have half of the corn I usually do.
